What LaSalle Capital buys

LaSalle Capital is a Chicago firm, founded in 2004, that invests only in the food and beverage world. It buys control of value-added food and drink makers that sell into premium private label, foodservice, specialty retail, contract manufacturing and direct-to-consumer channels. It also looks at ingredient suppliers, niche products and services sold into the food supply chain, and specialty agriculture. Its target is $10 million to $100 million of revenue and $2 million to $15 million of EBITDA, with $10 million to $30 million of equity per platform, often put in over several rounds to pay for growth, plant expansion and add-ons.

Its newest fund, LaSalle Capital RBIC, is licensed by the USDA as a rural business investment company and closed in April 2025 with about $91 million. The firm says it has invested more than $500 million across its funds. It keeps a small portfolio of five current companies, and its two newest platforms, Coalition Foods and Cheesemakers, were added in June and September 2026.

Greymont’s take

How LaSalle Capital fits a seller

LaSalle suits owners of food and beverage manufacturers with healthy margins, a defensible niche and a management team that wants to keep running the business. In both its 2024 Cascade Coffee deal and its 2026 Cheesemakers deal the sitting CEO stayed on, and LaSalle says its role is capital plus help with plant investment, new products, pricing and sales channels. Its criteria call for managers with a personal investment in the company, so leaders who stay should expect to be asked to keep a stake.

Holding periods vary. B-O-F was sold after about three years, while Joseph's was held for almost six, and both went to other private equity owners or their portfolio companies. An owner should ask which LaSalle fund would make the investment and how much more equity it plans to add after closing, since it often invests in stages.

Questions owners ask

What size food company does LaSalle Capital invest in?

Its approach page lists revenue of $10 million to $100 million and EBITDA of $2 million to $15 million. It aims to invest $10 million to $30 million of equity in each platform, often over several rounds.

Does LaSalle invest outside food manufacturing?

Yes, as long as the business sits in the food and beverage world. It also looks at supply chain services, niche products sold into the food supply chain and differentiated agriculture. Past examples include B-O-F, a refrigerated shelving maker, and Fresh Origins, a microgreens grower.

Does management stay after LaSalle invests?

In its two most recent announced platform deals, Cascade Coffee in 2024 and Cheesemakers in 2026, the existing CEO stayed on to lead the company. Its criteria call for a management team with a personal stake in the business.

What is LaSalle's newest fund?

LaSalle Capital RBIC, L.P. held its final close on April 8, 2025 with total commitments of $90,925,000, above its target. The USDA licenses it as a rural business investment company focused on the food and beverage value chain.
